Guests can dine on Japanese A5, the highest-grade wagyu, which offers sweet, melt-in-the-mouth texture, or Australian A9, which is tender and more firm.
Texas-sourced Rosewood A8, comprised of 50 percent wagyu and 50 percent Angus beef, provides a rich, beefy flavor with a tender and slightly firmer texture than Australian A9. All wagyu options are hormone- and antibiotic-free and served with red and black Himalayan salts so the flavors can stand out.
