Food and travel writer Francine Spiering delights in the eclectic nature of Houston’s culinary cuisine. In her recent book, “Houston Cooks,” she profiles several chefs that are defining the food scene. Here are a few:

Fadi Dimassi – Lebanese-American chef and founder of Fadi’s Mediterranean Grill. Dimassi began training at age 19 in his family’s restaurant.

Ara Malekian – The Armenian native’s food journey has taken him from Switzerland to Texas, where he now owns Harlem Road Texas BBQ.

Kaiser Lashkari – After leaving medical school to pursue his passion for cooking, the Pakistani native opened Himalaya Restaurant.
